This is on Netflix, it’s a French anime about 1) a boy coming of age in Paris, told through flashbacks and 2) a disembodied hand having adventures in Paris.

The animation is beautiful, the soundtrack is great, and the story is unpredictable and interesting. Definitely the best severed hand movie I’ve seen so far this year.
